Glands in the mouth take water and salt from the blood and add enzymes to it (amylase – is helps break down starch) and pumps it out into your mouth.

In our mouths and loads and loads of little glands. The take water and salt and other little chemicals and add little enzymes which break down food. You need the saliva to be able to break down food. If something is really sour you get lots more saliva don’t you? Its a reaction!
